How It’s Done:
Save yourself some time: You’ll need three pans. Have them at the ready alongside your ingredients and a chopping board. Slice the onions and the mushrooms; peel and crush the garlic.
Season the steaks with salt and pepper to taste. Leave to one side and let them warm to room temperature.
Heat a knob of Dromona butter in a large pan on a high heat. Cook the sliced onions for around 10 minutes, stirring constantly. They should be starting to brown, not burning!
Reduce the heat to medium and continue to stir occasionally. Meanwhile, heat another knob of the Dromona butter in your next pan and add the sliced mushrooms with crushed garlic and a pinch of salt. Reduce heat, cover and leave to simmer, stirring occasionally. Let the onions and mushrooms both cook for around 20 minutes.
Those steaks should be at the perfect cooking temperature now, so let’s get it sizzling! Put the third pan on a high heat, add two hefty knobs of Dromona butter until they’ve melted, then cook the steaks on both sides. The rich, smooth butter will give the outsides a beautifully deep colour, so cut a thin slice into one to make sure they’re cooked to your liking on the inside, too.
Remove the onions from the heat and splash in a small helping of balsamic vinegar. Give the onions a good mix with a spatula, coating them with the balsamic.
Mix the mushrooms in with the onions along with all of the spinach. Stir over a low heat until the spinach wilts.
Slice the steak to reveal the succulent colour inside and mix together with the side dish, or serve them as a traditional side-by-side delicious duo. Either way, this updated classic is sure to impress your date and your taste buds.
