Meltingly Tender Beef Stew by Darragh

A winter recipe classic! This hearty beef stew with meltingly tender meat is a one pot meal that feeds a crowd.

you will need a slow cooker.

Ingredients

  • 3 tbsp olive oil
  • 1 tbsp Dromona Butter
  • 700g steak pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 200ml beef stock
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato purée
  • 1/2 tsp paprika
  • 4 whole carrots, unpeeled & roughly sliced
  • 4 potatoes, quartered
  • 2 sprigs thyme
  • salt & pepper to taste

How It’s Done:

  1. Heat the oil and butter in a large pot over high heat. Brown the meat in two batches and place in the slow cooker
  2. Add the rest of the ingredients and stir
  3. Pop the lid on and cook for 4 hours on high or 8 hours on low
  4. Serve with some buttery mash or some crusty bread to the perfect winter warmer
