Buttery Festive Spiced Shortbread by @theteacozykitchen
This isn’t just your typical store-bought shortbread at Christmas. Rachael brings us this lovely spiced shortbread, perfectly delectable with a hot drink on those cold Christmas nights!

you will need a pan, a mixing bowl and a baking tray.
Preheat the oven to 150°C
Ingredients
For the shortbread:
150g plain flour, plus extra for dusting
100g Dromona Butter, browned and left until cool
50g caster sugar, plus 2 tbsp for sprinkling
¼ tsp festive spice mix
⅔ tbsp whole milk
For the festive spice mix:
4 tsp ground cinnamon
1 tsp ground coriander
2 tsp ground nutmeg
2 tsp ground ginger
½ tsp ground cloves
Made for sharing:

How It’s Done:
Brown the butter – cook the butter over a medium heat until brown and smelling nutty. Leave until cold.
The butter will have lost a little weight in the browning process so top it back up to 100g with fresh cold butter.
Put butter, sugar and flour into a bowl and mix until breadcrumb consistency.
Add milk a tbsp at a time until it forms a dough. Wrap in cling film and chill for an hour.
Roll out dough to 1cm thick and cut using different Christmas shapes.
Place dough shapes on a lined baking tray, prick with a fork and bake for 15 mins until slightly golden.
Mix the spice mix and remaining caster sugar and scatter over the shortbread and leave to cool.
