Darragh’s Cowboy Butter

This Cowboy Butter is so good on everything! Steak, chicken, pork, pasta, or anything you like! Make up a double batch and it will keep in the freezer for up to 6 months!

You will need a saucepan.

Ingredients

  • 100g Dromona Butter
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp Dijon mustard
  • 1 zest of lemon
  • 4 garlic cloves, crushed
  • Handful fresh parsley, chopped
  • 1 tsp chilli flakes
  • ½ lemon juice
  • Small bunch of chives, chopped
  • Small bunch of thyme, leaves only

How It’s Done:

  1. Melt the butter in a pan and whisk in paprika, cayenne, mustard, lemon zest and garlic until thickened.
  2. Stir in the rest of the ingredients and season.
  3. The butter should turn out nice and soft once it’s cooled.
